Ingredients
4 medium sized russet potatoes
½ cup all purpose flour
1 tablespoon corn flour
1 medium sized onion finely chopped
2 eggs
Salt
Paprika powder
Oil for frying
Method
1. Peel the potatoes and grate coarsely
2. Rinse the grated potatoes and place in a clean towel to drain the excess water
3. Place the dried potatoes in a bowl and add in the finely chopped onions, all purpose flour, corn flour and eggs.
4. Sprinkle salt on top of the mixture and combine well.
5. Heat a tablespoon or two of oil in a thick based pan
6. Take one tablespoon of the mixture and place it on the hot oil and flatten it
7. You can cook several patties at once, depending on the size of your pan.
8. Fry to a brownish color and flip and cook the other side the same way ( at least 2- 3 minutes for each side)
9. Remove from the heat and sprinkle the paprika (You can use black pepper or any other spice of your choice)
10. Enjoy your hash browns with your favorite accompaniment.
