Ingredients
Oil
3 eggs
2 cups of seasoned bread crumbs
½ cup all purpose flour
1 tablespoon corn flour
½ kilogram sausage meat

Methods
1. Boil two eggs in salted water (preferably hard boiled), remove from the hot water and place in cold water for a few minutes then remove, peel and place in a clean bowl.
2. Place the seasoned bread crumbs in a bowl and set aside
3. Combine the wheat flour, salt and corn flour into a bowl and whisk together.
4. Crack the remaining egg in a bowl and set aside.
5. Flatten a thick layer of sausage meat and shape it to wrap around the egg.
6. Gently coat the wrapped egg in the flour mixture.
7. Remove it from the flour mixture and dip it into the egg mixture and coat thoroughly
8. Remove from the egg and roll it in the breadcrumbs, ensure you coat thoroughly remove and set on a tray.
9. Repeat the same procedure with the remaining egg
10. Heat oil in a deep frying pan until golden brown
11. Remove and drain the excess oil
12. Serve your scotch eggs with hash browns or your favorite accompaniment
