Easy Potato Recipe
3 large Irish potatoes
2 large eggs
1 tablespoon shredded coriander leaves
1 medium sized onion
ΒΌ teaspoon black paprika
Salt
125 g mozzarella cheese
Method
1. Peel and grate the potatoes finely and drain off the excess liquid and place in a bowl.
2. Finely grate the onion and add into the bowl
3. Grate the cheese the same way and add in.
4. Mix thoroughly and set aside
5. Beat the eggs in a separate bowl and add in the coriander leaves, salt and paprika, whisk.
6. Pour the contents of the two bowls into a blender and blend for two minutes
7. Place an oiled skillet on heat and pour in a little amount of the mixture into the skillet and allow it to spread to cover the bottom of the skillet, only leaving a half inch at the sides.
8. Allow the bottom to cook to a golden brown color, flip and cook the same way adding in a little oil when necessary.
9. Repeat this procedure with the remaining mixture
