Ingredients
6 cups of white bread flour
1½ tablespoon dry active yeast
½ cup granulated sugar
113 g unsalted butter
½ teaspoon cinnamon powder
1 teaspoon salt
½ cup evaporated milk
1 egg
¼ teaspoon vanilla extract
2 cups of water
Method
1. Preheat the oven at 325 Fahrenheit
2. Sieve the flour, sugar, cinnamon and yeast into a bowl and combine well.
3. Add in the salt and combine. Salt kills yeast so avoid adding it directly to the yeast.
4. Whisk the milk and egg, then add in water and whisk the mixture well. This mixture should be at room temperature.
5. Gradually add this mixture into the bowl with the dry ingredients, kneading until dough is formed. Avoid adding any more flour.
6. Add small amounts of the solid butter and continue kneading until the whole stick is fully incorporated.
7. Transfer the dough to a working surface and continue the kneading process for 5 more minutes or until the dough resists kneading.
8. Cover with a damp clothing and let it settle for 10 minutes
9. In the meantime, grease your loaf pan
10.Flatten the dough with your hand or you can use a rolling pin, then with your fingers roll it inwards to form a log shape.
11.Gently press the edges together and place your dough into the pan with the seam side down.
12.Allow to proof in a warm place for 1 hour or until the dough has doubled in size. use a loaf pan that allows more room for the bread to rise during baking.
13.Bake for an hour
14.Remove from oven and place in a rack and allow it to cool for 30 minutes
15.Serve with hot coffee, tea or porridge!
