Potato Chapatis

Ingredients

3 cups all purpose flour

3 medium sized potatoes

3 tablespoons ghee

1 medium sized onion grated

½ teaspoon cinnamon powder

Salt

Oil

1 cup of milk cream

½ cup of water

 

Method

1.      Wash, peel and salt the potatoes and bring them to boil

2.      Remove the potatoes from heat, drain the excess water.

3.      Pour in the grated onion, add the ghee and mash the potatoes.

4.      Cover and set aside

5.      In a separate bowl, sieve in the all purpose flour, salt and cinnamon

6.      Add in 3 tablespoons of oil and rub it in.

7.      Warm the cream and add into the flour mixture

8.      Knead to form dough, add the water only if necessary.

9.      Grease the dough and cover it with a clean towel and allow it to settle for 15 minutes.

10.  Divide the dough into 5 or 6 small balls.

11.  Divide the mashed potatoes into an equal number of balls

12.  Using your hands, form a patty with the dough and place one mashed potato ball at the centre.

13.  Pull the dough over the ball to completely envelop it. Repeat the same procedure with the remaining dough.

14.  On a floured surface roll out each dough into regular chapatti shapes.

15.  Put a pan on heat , and place one rolled out dough on the surface of the pan

16.  Cook for a few seconds and flip to cook on the other side. Do this before adding oil to allow the potato filling to cook.

17.  Add oil in the pan, cook one side and when it turns golden brown, flip it and cook the top part the same way.

18.   Repeat this procedure with the remaining chapatis

19.  Serve with your favorite curry
