Recipe for Carrot Cake

Ingredients

350 g carrots

250 g all purpose flour

1 teaspoon baking powder

1½ teaspoon baking powder

½ teaspoon salt

4 eggs

200g sugar

¾ cup vegetable oil

3 tablespoons lemon /orange zest

1 tablespoon lemon/orange juice

 

Method

1.      Preheat oven to 170 degrees Celsius

2.      Peel and grate the carrots finely , place in a bowl and set aside

3.      In a separate bowl, sieve the flour, salt, baking powder, and baking soda and set aside.

4.      In a separate bowl, use a hand mixer to whisk the eggs, add in sugar and continue whisking to a creamy and pale colored batter.

5.       Add in the zest and juice of your choice and continue whisking

6.      Add the vegetable oil and whisk for a few minutes

7.      Add in the flour and mix using a spatula , add in bit by bit and fold in gently

8.      Add in the carrots and gently fold into the batter

9.      Grease a baking pan and line it with a baking sheet

10.  Pour in the batter and bake for 90 minutes

11.  Cover the baking tin with a foil if you notice the top of your cake burning

12.  Remove from the oven and place in rack to cool

13.  Garnish your cake as desired and enjoy!
