Recipe for Chicken Burrito

This juicy Chicken Burrito Recipe offers a perfect combination of flavors that will melt in your mouth.

Ingredients

½ kg chicken breast

1 small onion diced

2 cloves of garlic, crushed

400 g refried beans

1 sweet pepper thinly sliced (Preferably red)

1 teaspoon garlic powder

1 teaspoon of oregano

1 teaspoon of salt

Onion powder

¼ teaspoon black pepper

2 teaspoons of paprika

2 teaspoon dried thyme

400g canned corn

150g shredded cheddar cheese

2 ½ cups of cooked white rice

2 tablespoons olive oil

 

Method

1.    Prepare the burrito seasoning by combining the garlic powder, onion powder, oregano, salt, black pepper, paprika and thyme.

2.    Slice the chicken into two and coat the surface with 1 tablespoon of oil,

3.    Sprinkle the burrito seasoning on the surface of the chicken and coat thoroughly.

4.    Heat a skillet over high heat, add in the remaining tablespoon of oil and add in the chicken.

5.    Cook the chicken in the oil for at least 15 minutes or until the surface turns golden brown and remove from the skillet and allow it to cool then dice.  

6.    Add the diced onion, red pepper and crushed ginger in the skillet and sauté for a few minutes.

7.    Add in the refried beans and diced chicken, add in a little water. Reduce the heat and allow to simmer for a few minutes under low heat.

8.    When the gravy is thick and juicy, turn off the heat.

9.    Spread out a warm flour tortilla on a clean surface, gently spread a reasonable amount of rice, top up with the chicken filling, corn and shredded cheddar cheese.

11. Bake for 10 minutes at a temperature of 180 degrees Celsius or pan fry on each side for a few minutes.

12. Serve your chicken burrito with your favorite sauce.
