Recipe for Egg Fried Rice

Ingredients

3 cups of cooked rice

4 large free range eggs

1 large carrot diced

1 medium sized white onion diced

½ cup chopped spring onions (Green leaves only)

½ tablespoon paprika

½ tablespoon garam masala

1 tablespoon ginger and garlic paste

1 medium sized green pepper cubed

2 tablespoons butter

Salt

1 tablespoon light soy sauce

4 tablespoons cooking oil

 

Method

1.      Place a skillet under medium heat and add in the butter

2.      Make a French omelet , sprinkle the paprika, fold and set aside

3.      Increase the heat to high and heat a wok

4.      Add the cooking oil then fry the onions for a half a minute, add in the ginger and garlic paste, carrots, green pepper, soy sauce and garam masala.

5.      Add the rice and mix well until the ingredients are evenly combined

6.      Break the eggs into cubes and add into the rice and mix well.

7.      Sprinkle the freshly chopped green onions and mix well

8.      Remove from heat and serve with cold fresh juice
