Recipe for Egg Paratha

Ingredients

4 cups all purpose flour

2 teaspoons of salt

2 cups warm water

8 eggs

2 teaspoons oil

250g melted ghee/ butter

1 medium sized white onion

Oil

 

Method

1.      Mix the salt, flour and water in bowl and knead to make soft dough.

2.      Apply a tablespoon of oil on the dough, cover and set aside for 15 minutes.

3.      Divide the dough into 8 equal balls.

4.      Roll out one dough and apply a tablespoon of melted butter/ghee on the surface, dust lightly.

5.      Fold the dough inwards to form a long string then coil it to form another ball. (Repeat this with the remaining dough).

6.      Now roll out the oiled dough into circular shapes

7.      Place a pan under low heat and heat the each side of the 8 parathas for one minute and set aside ( Do not use oil).

8.      Heat oil in a pan and add one whisked egg. Place a paratha on top of the egg and continue cooking the egg.

9.      When the bottom of the egg has cooked, brush a little oil on the surface of the paratha and flip

10.  Cook the paratha to a brownish color

11.  Flip and brown your egg if it has not cooked to your liking

12.  Remove and cook the remaining parathas the same way.

13.  Enjoy your egg paratha as desired.
