Ingredients
1 kg all purpose flour
4 teaspoons baking powder
2 cups of milk
Oil
8 eggs
100 grams sugar
60 grams margarine/butter
Method
1. In a bowl, sieve the flour and baking powder and mix thoroughly
2. In a separate bowl, cream the sugar and margarine until fluffy and set aside.
3. Heat a little oil, using a spoon, sprinkle hot oil on the flour and baking powder mixture to create lumps. Use a spoon to stir in the oil as soon as the lumps appear.
4. Fold in the fluffy creamed mixture and mix thoroughly.
5. Add in the eggs, mix and begin kneading. Knead until the dough is thick and hard.
6. Cover and allow to rest for at least half an hour.
7. Divide into balls and roll out each ball to form a small circle.
8. Divide the circle into four or the number of pieces to your liking.
9. Heat oil in a deep frying pan and fry the dough until the bottom turns golden brown, flip and fry the other side until golden brown.
10. Remove and drain the excess oil
11. Your half cakes are ready to eat, serve with tea.
