Recipe for Lasagna

Ingredients

Meat Sauce

50 g butter

¾ kg boneless chicken, washed and chopped

½ cup chopped onion

4 cloves garlic crushed

500g tomato paste

4 large tomatoes crushed  

2 tablespoons white sugar

2 tablespoons red chilli flakes

1 teaspoon black pepper

1 teaspoon mixed herbs

2 medium sized bell peppers (Green and Yellow)

500g red chilli sauce

½ cup water

 

White Sauce

500 ml milk

50 g butter

3 tablespoons refined flour

½ teaspoon white pepper

½ teaspoon mixed herbs

½ cup of water

 

Lasagna Sheets

8 lasagna sheets

Salt

Water

 

Other

½ kg mozzarella cheese chopped

½ kg Parmesan cheese grated

 

Method

Meat Sauce

1.      Place a pan on heat and melt the butter

2.      Add in the onions and garlic and fry to a translucent color.

3.      Add in the chicken and fry until it turns to a golden brownish color.

4.      Add in the chopped tomatoes and cook for a few minutes.

5.      Add in the bell peppers and cook for a few more minutes.

6.      Add in the chili and tomato paste, cook until the gravy has thickened. 

7.      Add in the black pepper, mixed spices, sugar and salt, mix well.

8.      Add in the water and let the sauce simmer for a few minutes or until it has thickened.   

White Sauce

1.      Place a pan on medium heat and melt the butter

2.      Add in the flour and stir for a few minutes

3.      Add in the milk, keep stirring until the sauce thickens

4.      Add in the white pepper and mixed herbs and allow to simmer for a few minutes

5.      If the sauce is too thick, add in a little water

6.      The consistency should be thick and pourable

Lasagna Sheets

1.      Boil the water and add in salt

2.      Add in the lasagna sheets

3.      Boil for a few minutes until the sheets are soft

4.      Drain and set aside

Lasagna

1.      Preheat the oven to 375 degrees F

2.      Take two baking pans or more depending on the size of your pans and do the following for each pan :

3.      Coat the pans with butter and spread a layer of  white sauce on the bottom of the pan

4.      Cover the sauce with a sheet of lasagna ( or two depending on the size of the pan)

5.      Spread a layer of meat sauce

6.      Spread a layer of grated Parmesan cheese

7.      Spread a layer of mozzarella cheese

8.      Add another layer of white sauce

9.      Add another layer of lasagna sheets

10.  Add another layer of white sauce

11.  Spread the meat sauce

12.  Layer the Parmesan cheese

13.  Layer the mozzarella cheese

14.  Sprinkle a little mixed spices/black pepper or both

15.  Cover with aluminum foil

16.  Place in the oven and bake for 50 minutes.

17.  Remove and allow to cool and enjoy
