Recipe for Mandazi

Ingredients

4 cups (500 g) all purpose flour

135 g sugar

2 tablespoon baking powder

4 eggs

2 cups of milk

100g margarine

Oil

Method

1. Sieve the dry ingredients into a bowl, add in the margarine and rub it in.

2. Make a hole in the center of the bowl and add the eggs one by one and mix with a wooden spoon

3. Add in the milk and mix the same way until the dough comes together. Cover with a towel and let it settle for 15 minutes.

4. Divide the smooth dough into sizeable pieces and roll out

5. Cut into bitable sizes

6. Heat oil in a pan

7. Place the dough and deep fry until golden brown

8. Drain the mandazi on paper towels and store in a cool dry place.
