Recipe for Pancakes

Ingredients

2 cups all purpose flour

2 eggs

2 teaspoons vanilla extract

4 teaspoon baking powder

A pinch of salt

¼ cup of sugar

¼ cup melted margarine /butter

 1½ cups of milk

 

 Method

1.    Sieve the flour, sugar and baking powder into a bowl.

2.    Make a well in the centre of the bowl and add in the egg, melted margarine, vanilla and the melted butter and mix.

3.    Whisk the ingredients and gradually fold in the dry ingredients until the batter is thick and creamy.

4.    If the batter is too thick, add a few teaspoons of milk into the batter and continue whisking until you achieve the right consistency.

5.    Cover the mixture and set it aside.

6.    Heat a pan and grease it lightly.

7.    Pour a little amount of the batter onto the hot pan and spread into a circular shape.

8.    Cook until bubbles appear on the surface of the butter or until the underside turns to a golden brown color.  Flip the pancake and cook to a golden brown color. Cook the remaining butter the same way.

9.    Serve with fruit, maple syrup, frozen yoghurt or your favorite topping.
