Recipe for Pilau

Ingredients

½ kilograms long grained rice

3 tablespoons oil

1 large onion diced

3 cloves of garlic crushed

1 tablespoon of ginger crushed

½ kilograms beef cubed

½ cup of coriander leaves

Salt to taste

Pilau masala

5 large tomatoes skinned /500g of tomato paste

4 cups of hot water

4 medium sized carrots, grated

1 green pepper diced

 

 

 

Ingredients for Pilau Masala

For those who would do not like the store bought pilau masala you can make your own by grinding the following ingredients.  The rations are to be used for ½ kilograms of rice.

¾ Cumin seeds

4 Cardamom pods

1 Cinnamon stick

6 Cloves

5 Black peppercorns

 

Method

1.      Boil the meat until tender then fry it in oil until turns to a deep golden brown color.

2.      Add in the onions and garlic and fry until golden brown.

3.      Add in the vegetables; Tomatoes, carrots, green pepper, ginger and coriander leaves and stir, allowing it to cook to a thick consistency.

4.      Add in the rice and mix well, add the Pilau masala, salt and four cups of hot water.

5.      Cover

6.      Reduce the heat and allow the meal to simmer until the rice is cooked

7.      Serve

 

Pilau can be accompanied with fresh fruit juice, kachumari or meat sauce.
