Recipe for Wet Fry

Wet fry tilapia is a delicacy you can serve with Ugali , rice or even spaghetti.

Ingredients

A whole medium size tilapia (Fried in oil)

Oil for frying

I medium sized onion

1 medium sized green pepper, diced  

3 large tomatoes (preferably pureed)

1 teaspoon of ground ginger

1 teaspoon of ground garlic

½ teaspoon Garam Masala

½ teaspoon curry powder

¼ cup of milk/coconut milk

½ teaspoon black pepper

Salt

Method

1.      In a large pan , heat oil and add in the onions

2.      Fry until it is translucent in color and add in the garlic, ginger and green pepper.

3.      Add in the pureed tomatoes and stir for a few minutes, when the sauce begins to thicken, add in the Garam masala, curry powder, black pepper and salt and stir.

4.      Add in the milk and stir to mix thoroughly,

5.      Gently place in the tilapia and coat the top part by pouring the sauce that has over flown on the sides. (You do not want to turn the tilapia and risk mashing it).

6.      Cover your pan and reduce the heat. Let the sauce boil for 2-3 minutes and turn off the heat.

7.      Serve the delicious tilapia as desired.
